One of my goals for this year has been to eat more vegan meals in order to help the environment as well as my health. Eating vegan meals has a tremendous impact on not only my own life but also the lives of the rest of the world. (Some documentaries that might be interesting to anyone that might be interested in veganism are Cowspiracy, Vegucated, Food Choices, Food Matters, Forks Over Knives and Earthlings.)
I really enjoy sugar snap peas, but I’m not a huge fan of eating them raw. My family is really into sauteed vegetables and that’s usually how I make them. I then saute some mushrooms and onions and put this mish mash on a bed of brown rice.
Here’s the recipe for my sauteed snap peas:
24 oz of snap peas
2-3 tbsp of olive oil
1 tbsp Bragg’s Liquid Aminos or soy sauce if you aren’t gluten intolerant
1 tbsp of salt
2-3 cloves of minced garlic
1-2tbsp of ground black pepper
Remove and discard the stem end and string from each sugar snap pod. You can use a spoon to do this by scraping the ends.
Heat the olive oil in a large saute pan over medium-high heat. Add the garlic and heat until brown. Add the sugar snap peas and liquid aminos.
Add salt and pepper to taste and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
The recipe for the mushrooms and onions is more or less the same idea.
2 containers of portobello mushrooms (sliced)
1 white onion (chopped)
2 tbsp Soy Sauce or teriyaki sauce
1 tbsp of garlic powder or 1 clove of fresh minced garlic
Salt to taste
Pepper to taste
Heat the olive oil in a large saute pan over medium-high heat. Add the mushrooms, onions and fresh garlic ( if you are using fresh) and heat until onions are translucent. Toss while it is heating.
Add the soy sauce or teriyaki sauce (and garlic powder if you are using the dry stuff). Toss for a few minutes. Add salt and pepper to taste. Voila!
